Do you like pancakes? I know I do. I remember waking up on Sunday morning in Wichita Falls, Texas and my mom would be flipping pancakes, and the smell in our house would be so delicious. Now that’s such a nice memory. Cooking and making memories is what Mother’s Day is about!
I love making pancakes for my own family but I’ve been looking for a more nutritious way to make them with no gluten and less sugar. I found a delicious alternative… chickpea flour.
The Italians have been using it for hundreds of years; and it has a boatload of fiber and protein.
I prepared two different chickpea pancake recipes. one savory and one sweet.
This recipe is completely versatile so feel free to change up the toppings. You can sauté mushrooms, onions, and chicken to make a delicious dinner, or make it into a taco night with ground turkey, taco seasoning, and condiments.
